Grapefruit Olive Oil Cake

I cringed just a little as my right ear and cheek hit the coldness of the desk in front of me, she had her soft hand on the back of my neck. A tear from my left eye trickled over the bridge of my nose and stung my right eye. (cross contamination) I hurt really bad; I was 15, had the first ear infection I can remember having and I didn’t want to live anymore knowing that this kind of pain existed in the world. It hit me like a mac truck, I was sitting there typing up a paper on the continental drift and then BAM, little missy your ear just exploded. Teta would fix it, Lebanese grandmas always have a remedy for what ails you – and it is usually olive oil. Remember this for when you are married she tells me, one day your sons will need it too. I swear about two cups of extra virgin when in that ear and not one drop oozed back out. Ever. Kind of freaky right, I mean, did my brain just absorb it??

Maybe this is why I have such great hair…

I haven’t been the same since that day, I’ve always got olive oil on the brain. Just the other day, I found myself locked out of my apartment. It was a long day and I was exhausted, the next thing I know I am greasing up the hinges on my door with olive oil and knocking the hinge pins out with the heel of my shoe. I am becoming my grandmother I laughed to myself. I am crazy, I got in though.

The Moussa’s wrote the book on unorthodox uses for Olive oil. (Well actually Alexander Smith Mcall did – Uncommon Uses for Olive Oil – but his book isn’t actually about olive oil.)

Here are a couple of my favorites from our secret catalogue:
1.    When rubbed in twice weekly, it will give you amazing cuticles.
2.    You can achieve the closest and smoothest shave with it.
3.    Use it to use free a stuck zipper.
4.    Wood floor or furnisher polish
5.    Cake

Yup – not only can it dress a salad, fry a chicken, polish your boots, defrizz your hair, and gloss your lips, but you CAN MAKE CAKE WITH IT. Multi taking to the max. I think I am in LOVE.

Grapefruit Olive Oil Cake
makes ten servings

2 Grapefruits, Juiced and Zested
1 Cup Sugar
½ Cup Yogurt
3 Eggs
2/3 Cup Olive Oil
1 ¾ Cup Flour
2 TS Baking Powder
½ TS Baking Soda
½ TS Salt

Pre heat your oven to 350° and grease the baking pan you would like to use. Zest and Juice to grapefruits, mix the zest into the sugar with your fingertips, this will release the oils from the peel. Measure and combine all the dry ingredients in a bowl and set aside. Measure and combine all remaining wet ingredients and then combine to two batters. Bake for 45 – 55 minutes, until an inserted toothpick comes out clean. Allow to cool for ten minutes before removing from the pan.  

Glaze Ingredients
½ Cup Brown Sugar
½ Cup Powdered Sugar
3 TB Grapefruit Juice

Glaze Instructions
Whisk all the ingredients together until fully combined and smooth. Drizzle like there’s no tomorrow.
