Grain Salad with Spinach, Basil and Apples


Reasons why I cannot be Vegan:
(Even though this salad is delicious AND vegan)

Bacon
Chocolate Bread from Con Pane in San Diego. 
which I am going to be eating some in exactly two days. woo!
Sushi
Dark Chocolate Wafers from Miette in San Francisco
Cognac Leather Boots
It would severely limit the number of things I can put Toum on  
Nutella Lattes from Pound the Hill in DC
Dungeness Crab  
Carnitas from Super Cocina in San Diego
My Family would disown me
Dulce de Leche filled Rip Van Waffles at Ritual in San Francisco 
Butter 
Any and ALL Cheese
Curry Goat 
Beef Brisket from Salt Lick Austin 
Cream in my Coffee

That being said, just because I don't want to be vegan doesn't mean I can't eat vegan sometimes, or most of the time. I'm a flexitarian. Vegetarian most of the time, vegan sometimes, meat and cheese sometimes. But I always and I mean always... eat dessert. 

Grain Salad with Spinach, Basil and Apples
Makes 4 servings

Salad Ingredients
2 Cups Cooked Grain (Brown Rice or Farro are my favorites for this recipe)
1 Cup Baby Spinach, Chopped
½ Cup Fresh Basil Chopped
1 Apple, Chopped (I recommend HoneyCrisp or Cameo Apples)
¼ Cup Pistachios, Roasted and Chopped

Dressing Ingredients
3 Cloves Garlic, Minced
¼ Red Onion, Minced
3 TB Parsley, Chopped
3 TB Olive Oil
1 TB White Wine Vinegar
1 TS Herbs de Provence
Salt and Pepper to taste

Instructions
Boil Grains, Strain and Cool.
Chop Spinach and Basil into thin strips. Chop Apple. Chop Pistachios
In a large bowl, combine dressing ingredients and whisk to combine. Toss with grains, greens and apples. Portion out into individual servings and top with chopped pistachios. Serve to someone you love.
