Short Ribs with Cranberry Simmer & Green Bean Salad

I invited some beautiful girls over for dinner and naturally wanted to make something super fancy. I decided on flavorful and summery but still hearty. The menu was – Tomato Flan – Beef Short Ribs with Cranberry Simmer, Green Bean Salad and White Peach Galette with Raspberry Coulis and Fresh Whipped Cream.
I forgot one important thing though, no not the wine I remembered that a crisp Rose. I forgot that I don’t have a table.  Kind of important right? I also worked for a whole week plotting up this Tomato Flan recipe which I thought was going to be ground-breakingly delicious and then left out an ingredient, a really important one and the flan was too runny and although it still tasted like tomato goodness it was more of a tomato mousse than flan. I must be distracted, it happens. Thankfully my guests went along with it, brought a table and dipped their bread in tomato mousse. Look forward to a Tomato Flan recipe after a little more practice.
We also worked on a surprise for you all, but I’m not giving it away yet.

Beef Short Ribs with Cranberry Simmer
I went on a short rib kick once, it felt like every restaurant had them on special or highlighted on the menu and it was the only thing I would order. They are better than back ribs because they have more meat on them and when cooked low and slow they become heaven.
Cranberry Simmer is almost a homemade BBQ sauce, the recipe was adapted from a BBQ recipe, but since I am from California and don’t want to get involved in the great American BBQ debate I am going to make sure that it is called something else.  But if you want to use it for BBQ I won’t be mad at you.
½ Cup Cranberry Sauce
3 TB Apple Cider Vinegar
1 TB Mustard
¼ Cup Brown Sugar
¼ Cup Soy Sauce
¼ Cup Teriyaki Sauce
4 Cloves Garlic
½ Yellow Onion
¼ Cup Tomato Paste
1 TS Cayenne Pepper
2 Chipotle Peppers
Salt and Pepper
Although this sauce calls for many ingredients, don’t be intimidated it’s actually very simple. You just need to measure them out and then combine. You can mix them together by hand like I do or put them into a food processor to make a more smooth sauce.
Once the sauce is made pour it over the short ribs and cover; bake them in the oven on very low heat, I recommend 200 degrees, for  about 4 ½ hours. Then Forget about it, and try not to open the oven.
This is a great recipe for dinner parties because it is virtually hands free and you can spend the time it takes the meat to cook prepping the rest of the meal and getting ready.

Once the short ribs have cooked for 4 ½ - 5 hours take them out of the oven and let them rest a few minutes before uncovering and serving. Be careful when plating because they will be very tender and falling apart, I think it appropriate to drench each one in a few more spoonfuls of the sauce. Which will be spicy, sweet and extra rich, why is it so rich you ask? Well a short rib is cut across the bone and while heating up in the oven the marrow will get all melty and seep into the sauce. You want the green bean salad recipe too? Well, here it is.

Green Bean Salad with Blue Cheese
1 Handful Green Beans
1 Handful Wax Beans (they look just like green beans but are light yellow)
¼ Red Onion
chiffonade
3 TB Olive Oil
1 Handful Watercress
2 oz. Blue Cheese
Mint
1 Lemon’s Juice
Salt and Pepper
Trim and clean the beans and boil until bright and tender, then transfer to an ice water bath. Or if it’s not that serious you can just put them in a strainer and run cold water over them until they cool down and you stop the cooking process.  Chop the onion and add to Lemon juice and olive oil. Chiffonade the mint. Chiffonade sounds so fancy huh? Well, to chiffonade you stack the mint leaves on top of each other and then roll them tightly. Now chop finely, once you are done you will have mint confetti. You have to Chiffonade tender little herbs like mint a basil because they bruise easy. Be gentle with them.  Now add the rest of the ingredients and toss. It will look like this.
